Rose Cupcakes

Until the awesome Hummingbird Bakery book, Cake Days, I had never contemplated the idea of making a cupcake with the fragrant hint of...flowers. But knowing how reliable the recipes from this book are, it would have been silly not to try such an intriguing recipe. Very silly indeed, because they were delicious! Be warned: the frosting is the kind you want to make just to eat with a spoon.

Chocolate Mudslide Cookies

Remember when I made Oatmeal Caramel Crumble Bars to get over failing the English prelim? Well, the exam was today. Let's just say I'll need at least three batches to recover. In the meantime let me tell you about  this insane chocolate cookie recipe from Cookie Madness. Chocoholics, I guarantee you will LOVE these cookies. Plus, the texture is so fudgy and mmmmm-y! As you can tell my brain is far too overworked to think of any decent adjectives. Anyway, I would even go as far as to say that the Triple Chocolate Oreo Chunk Cookies have some competition! 


BTW: The recipe uses cake flour - make your own here but if you only want to make enough for this recipe, measure out the 1/4 cup flour and replace slightly less than 3/4 tbsp with cornflour.

Cola Cupcakes

I'd been wanting to make these cupcakes from The Hummingbird Bakery for a while; the only thing I needed was Cola syrup. I looked far and wide at many supermarkets, and didn't want to pay postage rates for buying it online. I had accepted I would never experience a Cola cupcake. But then - in the pet shop, of all places - I had finally found not only Cola syrup, but a whole variety of syrups from Cream Soda to Lemonade! To sum up how good these cupcakes are, I'll leave you with one final thought: a family member, who shall remain unnamed, ate three in one day.

Chocolate Chip Salted Caramel Cookie Bars

From Two Peas & Their Pod, this recipe is a recent favourite of mine. The cookie dough is delicious (no doubt I'll be making it in the future to eat straight from the bowl) but with the salted caramel, words can't describe the yummyness! Can you see the caramel oozing out of the middle? AARRGHHH! If you can wait until these bars are cool before inhaling them, you have serious skills in the art of self-control.

Cookie Dough Peanut Butter Cups

Only having one mini-muffin pan has recently caused me a great deal of pain: I had to make HALF a batch of these delicious peanut-butter infused cookie dough cups. They were gone before I could take a better picture.  If I haven't made this clear already, I love cookie dough!! These were awesome, and I don't even like peanut butter! But beware - don't make a half batch if you can help it, make the full amount because they will be gone in a flash.

Chocolate Guinness Cake

Back in September 2011 when I started this blog, one of the first recipes I posted was for Chocolate Guinness Cupcakes. This recipe is quite similar, but made in cake form rather than cupcakes. Both are delicious and have only slight changes, but I can verify they are both delicious. The cream cheese frosting is to-die-for and is so easy to make, as is the other recipe (which uses double cream). Whatever recipe you go for, you must make one of them. So moist and chocolaty, enhanced by Guinness. YUM!

Homemade Snickers Bars

I've been eating these all morning. Just a heads-up. Anyways...
I do like a Snickers bar. Especially when they're in brownies or, even better, in brownies with caramel. But with the opportunity to make actual Snickers at home, it was a no-brainer that I'd be making these after seeing the recipe on Brown Eyed Baker. The flavours and textures will leave you coming back for seconds, thirds, fourteenths! Great for gifts, parties, guests...or eating for breakfast despite a lifelong grudge of eating sweet things before lunchtime - they're that good. 
 The chocolate layers are made up of milk chocolate mixed with peanut butter. I hate peanut butter on it's own, but with the chocolate it's extremely addictive. The nougat bit is chewy and divinely squidgy. I reduced the amount of peanuts by half a cup - it worked fine but if you want a bit more crunch in your nougat, add the full amount. Then the caramel...it speaks for itself, don't you think?! The final element to this masterpiece is more milk chocolate melted with peanut butter. The result is a delicious, addictive chocolate bar with the added satisfaction of making it yourself.

Mint Hot Chocolate Cupcakes

Studying for your exams can be stressful. Today was my first exam and *touchwood* I think I made it. Yesterday, after a long and dreary day of studying, I made these cupcakes. From the awesome book Making Cupcakes with Lola, they consist of chocolate cake filled with a refreshing minty filling and topped with a light and fluffy peppermint frosting. Whether you're doing exams or not, you deserve to eat these cupcakes.

Malted Chocolate Chip Cookie Bars

Let's use me eating most of this before it was even cooled as proof of just how good it is. It's got everything in it; marshmallows, chocolate, maltesers and Ovalitine all contribute to a lusciously gooey, chewy texture and the awesome taste of malt, cookies and chocolate rolled into one.
