Cookie Dough Truffles

After receiving my copy of The Cookie Dough Lover's Cookbook, and trying five of the recipes within a three-day period, I can highly, highly recommend this book. It was the 50th addition to my shelf of baking books and this is the one I was most excited about. It's awesome. The cookie dough is insanely good - the best ever - and here it is dipped in chocolate. Now go buy the book, you won't regret it!

Cookie Dough Truffles


1/2 cup (1 stick) unsalted butter, room temperature
1/4 cup granulated sugar
1/2 cup light brown sugar, packed
2 tablespoons milk or cream
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
1 cup mini semisweet chocolate chips
8 ounces dark-chocolate candy coating




Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy. Add milk and vanilla. Fold in flour, baking soda and salt until incorporated. Stir in chocolate chips.
Cover and chill dough for 1 hour.
Form dough into 1" balls and arrange on a baking sheet lined with waxed paper. Place sheets in freezer and let chill for 30 minutes.
Dip in melted chocolate using a fork and place back on baking sheets. Chill until set. Store, chilled, in an airtight container for up to 1 week.
