Coffee Cakes

This is my favourite coffee cake recipe. Light, moist and delicious, they can be made as 12 cupcakes or as one two-layered cake. The recipe couldn't be easier! There's nothing much more to said about these - except that they are guaranteed to please.


Coffee Cake/Cupcakes

3 eggs
170g self raising flour
170g butter, melted
170g caster sugar
1 tsp baking powder
2 dessert spoons coffee granules

Coffee Buttercream:
150g butter
275g icing sugar, sifted
2 level tsp coffee, dissolved in tiny amount hot water

Dissolve the coffee granules in the smallest amount of hot water possible. 
Sift the flour, sugar and baking powder into a mixing bowl.
Add the coffee, eggs and melted butter.
With an electric mixer, beat for around 2 minutes until mixture is light and smooth.
If making cupcakes, divide the mixture between 12 muffin cases and bake for 15 minutes at 170°C.
If making a layered cake, divide mixture between two 7" sandwich tins and bake for 30 minutes.

Coffee Buttercream:
Cream the butter until soft. Gradually beat in the icing sugar and coffee. Mix until even in colour then spread over the cakes.
